This was easy to change on the PCs - just change the default data file in Outlook/Account Settings to the new exchange account, and all work like a charm in Outlook 2016 for Windows.
I have also copied all my contacts and calendar entries and Outlook folders from the old exchange account to the new exchange account, as I want to use the original exchange account only for occasional emails, but not for any other functions. That works now. However I need to have new appointments stored in a specific account calendar.
Right now they go to 'On My Computer' storage, which is patently useless when sync'ing to other devices. If I create a new meeting, there's a UI to allow me to choose the calendar to be used, but not for appointments, and I can't make single-person meetings (which is again ridiculous.) I feel this is likely a testing oversight that should have been bugged early in the project.
